This is one of my favorite recipes when I’m crunched on time or just starving. It’s delicious, almost all organic, low calorie, low carb, high protein, gluten free, Paleo, has healthy fats and fiber, there’s no need to measure ingredients (which means fewer dishes) and you can get it all at Trader Joe’s. If you haven’t tried the Coconut Aminos* yet, you’re in for a treat! It’s my go-to sauce because it's almost like a teriyaki sauce, but has way less sodium. Best of all, the sweetness comes naturally from the coconut. *If you like a saltier taste, you can use liquid aminos (I use Bragg’s for a more traditional soy-sauce flavor).
Ingredients:
1 box frozen Mahi Mahi Burgers (1–2 per person/sub meat or veggie burger if desired)
1 bag Organic Riced Cauliflower
Organic Coconut Aminos (to taste, I use about ¼ of the bottle)
1 bag of Organic Broccoli Florettes
1-2 T Organic, Cold-Pressed Coconut Oil
Seasonings to taste (optional: garlic powder, sea salt, lemon pepper, ginger)
Directions:
Preheat oven or toaster oven to 375º and then cook Mahi burgers for about 15 minutes.
Meanwhile, in 2 separate pans, heat ½-1 T of coconut oil per pan
Cook the broccoli and cauliflower rice in the separate pans on the stovetop over medium heat
Add Coconut Aminos & optional seasonings to the veggies, stirring occasionally until heated
Serve and enjoy!
