Ingredients:
1 pack of ground turkey or chicken, frozen shrimp or canned green jackfruit in brine (vegetarian option)
1 frozen bag of fajita veggies
1–2T taco seasoning
1 diced or sliced avocado
1–2 T coconut or avocado oil
Optional Ingredients:
Salsa
1 individual container of plain Greek or non-dairy yogurt
1 T lemon juice (1 lemon)
Directions:
Heat a large pan on stovetop to medium heat and melt oil
Heat frozen fajita veggies on pan until defrosted
Push the veggies to the side of the pan with a spatula and add your protein of choice to pan. Stir or separate (if ground meat) occasionally.
Once meat is close to fully cooked, add taco seasoning and optional salsa to taste
Stir all ingredients together and heat until fully cooked.
Serve in a bowl, add avocado, salsa & enjoy!
Optional: mix lemon into yogurt and add desired amount on top of fajita bowl as a sour cream substitute
